Top Out Brewery in Edinburgh recently brewed a summer Berry Saison beer in collaboration with Simon Martin from Real Ale Craft Beer, Britain's most popular video beer reviewer. The tasty brew is aptly called ‘Simon Says-On’.
“This wonderfully pink Berry Saison is our first fruit beer. We added 100 kg of fruit - raspberries, blackberries, blackcurrants and cherries,” says Head Brewer, Michael Hopert.
“No concentrates or flavourings were used! So it's certainly fruity with a nicely balanced acidity, and our most vinous beer yet. The berries are definitely the stars in this craft ale. To let them shine through we used the mild Admiral and Tettnanger hops, as well as a touch of crystal malt.”
Simon spent a happy day at the brewery playing the role of brewing assistant to Michael while videoing the whole process.
“After reviewing the other Top Out beers it was clear to me that Michael and the team know how to brew a good beer; when choosing a brewery to collaborate with it’s always important to choose one whose quality shines through,” says Simon Martin. “Top Out’s beers are fantastic with a good, broad choice of styles to choose from."
“Arriving in Edinburgh and catching the tram to the city centre really captured my imagination of how the city would be. After visiting a few of Edinburgh’s fantastic Craft Beer bars and then being given a sightseeing tour by Michael, the Head Brewer, we made our way to Top Out’s brewery just south of Edinburgh; there we recorded the whole brewing process, while sampling some Michael’s rarities."

What do you think of your Simon Says-On? Can you describe its flavours and characteristics.
“The berries in the beer really shine through with the raspberry and blackberry each offering their own little flavour characteristics. It’s fruit punch combined with great carbonation and slight sharpness from the saison yeast to produce a complex, yet easily drinkable beer.”
When is the ideal occasion to drink Simon Says-On?
“Ah, this beer would go down a real treat with a BBQ with friends or family. Equally I could imagine myself finishing work and heading home and refreshing myself with a Simon Says-On. It’s a perfect revival beer after a hard day’s slog!”
The label shows Mount Snowdon
Climbing is Top Out’s other passion and each of their beer labels shows the map of a different mountain and a route to its summit, all of them completed by their head brewer. Simon is Welsh so their berry saison label shows, for the first time, not a Scottish but Welsh mountain. The route tops out on Mount Snowdon via Parson's Nose and Clogwyn y Person Arete.
